Watermelon Salad With Feta Cheese And Mint

  • 4 to 6 cups seedless watermelon, cubed
  • 1/3 cup olive oil
  • 2 limes juiced
  • 1 teaspoon salt
  • 20 mint leaves, finely chopped
  • 1/2 cup crumbled feta cheese


  1. Place chopped watermelon in a large bowl.
  2. Combine olive oil, lime juice, salt and pepper. Whisk well.
  3. Pour olive oil dressing over the watermelon and gently toss.
  4. Sprinkle with chopped mint and crumbled feta.
  5. Toss again so all of the ingredients are combined.
  6. Refrigerate and then serve immediately (within about 1 to 2 hours of prep)
