Spicy Corn Salsa

Ingredients

  • 3 cups corn (about 4 to 5 corn cobs, husks removed)
  • 1 poblano pepper
  • 1 jalapeno
  • 2 teaspoon olive oil
  • 1/2 small red onion, finely chopped
  • 2 tablespoon fresh chives chopped
  • 1 lime, juiced

Instructions

  • Heat grill to medium high heat.
  • Brush the poblano pepper and corn with oil.
  • Place over the grill and let the pepper and corn develop grill marks, about 3 to 4 minutes.
  • Remove from grill and let cool.
  • Once cooled, chop poblano pepper into chunks and remove corn from cob.
  • Transfer both into large bowl.
  • Add remaining ingredients to bowl; toss until combined.
  • Adjust seasoning and add salt and pepper to taste.
  • Serve with tortilla chips.
