Veggie Egg Bites

  • 7 eggs
  • 1/4 cup whole or 2% milk
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1/3 cup raw spinach, roughly chopped
  • 1/2 cup of bell pepper, diced and seeded
  • 1/3 cup of onion, diced
  • 1/2 cup shredded cheddar cheese


  1. Preheat the oven to 350 degrees.
  2. Whisk together the egg, milk, salt, and pepper.
  3. Add spinach, bell pepper, onion, and cheese to the bottom of each muffin cup.
  4. Add 2 to 3 tablespoons of the egg mixture to each muffin cup.
  5. Bake for 22 to 25 minutes until the egg mixture is set.


  • Silicone muffin pans work best with non-stick.
  • If using cupcake paper, spray generously with non-stick spray.
