Nut Free Energy Ball Recipe

Ingredients

  • 2 cups gluten free oats
  • 2/3 cup flax meal
  • 1 cup sunflower seed butter
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Heaping 1/4 cup chocolate chips

Instructions

  1. Place the oats, flax meal, and salt in a medium sized bowl. Stir to combine. Add the seed butter, maple syrup, and vanilla and stir to combine. Stir in the chocolate chips. This mixture should form a dough that's easy to form into balls that stick together. If the mixture seems too dry, add a splash more maple syrup.
  2. Using a small cookie scoop or tablespoon, roll the dough into balls. Transfer to a small storage container and keep in the refrigerator.

Notes

This double batch makes about 12 servings (2 balls per serving; 24 balls total). Cut recipe in half if making at home.
