Fudgy Blackberry Black Bean Brownies

These brownies deliver chocolatey goodness, along with protein and fiber from black beans and a hint of blackberry deliciousness. Read now.

Ingredients

  • 15-ounce can black beans, drained and rinsed
  • 3 large eggs
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 8-ounce premade or homemade blackberry jam

Instructions

  1. Preheat oven to 350 degrees.
  2. Puree black beans in food processor until a rough paste (can add 2 to 3 tablespoons of water to aid in puree process).
  3. In a large bowl, mix bean puree, eggs, oil, and vanilla.
  4. In a separate bowl, combine cocoa powder, sugar, baking powder, and salt.
  5. Add dry ingredients to wet ingredients, then stir in chocolate chips.
  6. Grease an 8x8- or 9x9-inch pan, line with parchment paper, and pour in batter.
  7. Pour jam on top and use a toothpick to swirl into brownie.
  8. Bake 25 to 35 minutes for fudgy brownies (longer if desired).
