Dijon Egg Salad Sandwiches

  • 8 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons Dijon mustard
  • 3 tablespoons finely diced celery
  • 3 tablespoons finely diced onion
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt (or to taste)
  • Freshly ground black pepper (to taste)
  • Leaf lettuce
  • Whole wheat bread, toasted


  1. Peel and chop the hard-boiled eggs and transfer them to a medium mixing bowl (hand chop or via food processor).
  2. Add in the Dijon mustard, celery, red onion, onion powder, paprika, salt and pepper.
  3. Stir to combine.
  4. Serve on toasted wheat bread with leaf lettuce.
