Ingredients

  • 1 pound lean (93%) ground beef or turkey
  • 2 bell peppers (green, red, orange)
  • 2 large carrots, diced
  • 1 medium onion, diced
  • 1 celery stalk, diced
  • 1 28-ounce can crushed tomatoes
  • 1 tablespoon chopped garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 15-ounce can low-sodium beans (black, kidney, great northern)

Instructions

  1. In a large skillet, cook meat until thoroughly browned. Drain off excess fat and add to Crock Pot.
  2. Add bell peppers, carrots, onion, celery, crushed tomatoes, garlic, cumin, chili powder, and paprika. Stir to evenly combine all ingredients.
  3. Cook on low for 4 hours. Add beans and cook for an additional 1 hour until beans are cooked.
  4. Stir together and remove from Crock Pot. Serve and enjoy!
